This Mixed Berry Champagne Spritz is the perfect pairing for Snickerdoodle Cookies. Just add champagne to a quick mixed berry syrup and top with club soda.

One night I had an open bottle of champagne and I wanted a cookie. I was thinking of what kind of cookie would work well with the champagne. There were a couple cookies I figured would work well, but one in particular came to mind. Snickerdoodles. I don’t know if I thought of these because I was craving cinnamon sugar or if I actually thought it would work well, but I am so happy I did. Snickerdoodles were made for champagne. These cookies work so well with the champagne alone, but then I thought why not make it a little better? And this Mixed Berry Champagne Spritz was made!

This cocktail was so good I figured I could also serve it at many different occasions. The first occasions that come to mind are an afternoon tea, 4th of July, New Years Eve, Date Night, BBQ and so many more! Seriously, this Mixed Berry Champagne Spritz is easy, delicious and takes Snickerdoodle cookies to a whole other level!

Mixed Berry Champagne Spritz Recipe Notes & Substitutions

Mixed Berries– I used a blueberry, raspberry and blackberry mix. Use whatever berries you like, strawberries would work well in this too.

Champagne– Use Prosecco, Cava, Champagne or any other sparkling wine you enjoy. Just make sure it isn’t too sweet. If you have a sweet sparkling wine reduce the honey amount in the syrup. It will still work but won’t be as balanced. Conversely, if you have a very dry sparkling wine or like a sweet drink add a little extra honey into the syrup. Get the sparkling wine you like best or that you would use with mimosas and it will work well. Non-Alcoholic– If you want to make this non-alcoholic there are two best ways. Use the syrup and the soda water the same. Then to substitute champagne there are a couple options. First, use apple juice and a little lemon juice in place of the champagne. Second, use oolong tea in place of the champagne. Third, use ginger beer in place of champagne. Fourth, use only soda water.

Champagne has the perfect flavors to work with snickerdoodles. There are notes of apple, pear, apricot and even floral notes to champagne. Depending on where the champagne or sparkling wine comes from the notes may differ. But all of these flavors work so well with snickerdoodles. Champagne also works so well with this because the snickerdoodle is a very known flavor, but it isn’t intense. The cookie is coated in beautiful cinnamon and sugar, but the cookie itself is relatively plain. Champagne does not overwhelm the cookie and the nutty flavor in champagne pairs incredibly well with the buttery and almond notes in the cookie.

Similar to the champagne, mixed berries work incredibly well with snickerdoodles. The cinnamon and sugar combination highlights the berries like a mixed berry pie. The flavors not only highlight each other, but also meld together so well. The almond brings out the floral aspects of the blueberry and the fruitiness of the raspberry. The sugar enhances the flavor of the berries, as sugar enhances flavors. Mixed Berry Champagne Spritz

This Mixed Berry Champagne Spritz is the perfect pairing for Snickerdoodle Cookies. Just add champagne to a quick mixed berry syrup and top with club soda. 

Ingredients
  

Mixed Berry Syrup

  • 2 tbsp Mixed Berries
  • 1 tbsp Sugar
  • 1 tbsp Water

Champagne Spritz

  • 0.5 oz Mixed Berry Syrup
  • 3 oz Champagne
  • 1 oz Soda Water

Instructions
 

Mixd Berry Syrup

  • Add the berries, sugar and water into a microwave safe container. Microwave for 1 minute until warm and the sugar dissolves.
  • Let cool and then strain the berry solids out of the syrup. Conversely leave the berries in the syrup, but I prefer the smooth syrup in the spritz.

Mixed Berry Champagne Spritz

  • Add the syrup, champagne and soda water into a champagne flute and add frozen berries. Serve with the Homemade Gluten Free Champagne Spritz.
